Maple Pudding Cake

The Background

This recipe was first introduced to our family years ago by Aunt Suzie.  This is a real quick dish that everyone I’ve served has thoroughly enjoyed.  Its best with a little cream on top and served warm.

1 1/2 cups flour
2 tsp. baking powder
3/4 cup milk
3/4 cup water
3/4 cup sugar
1/4 tsp. salt
1 1/2 cups Very Dark Strong Taste/Baking Maple Syrup
2 tbs. butter

Combine dry ingredients. Stir in milk. I just combine the ingredients right in the 2-quart baking dish and form a mound in the middle of the dish. In a pan on the stovetop heat the maple syrup, water and butter, until the butter melts. Pour over batter. Bake at 350 degrees for 45 minutes. Serve warm. I like to bake this an hour or so before dinner and cover. Whipped cream or ice cream makes a nice topper for company.
