Many customers are asking for a stronger flavored syrup that they can use for special recipes such as baked beans and homemade jerky. Some of you are asking for a very dark syrup to make Mead. While still other customers are looking for a syrup that is rich in minerals.
Although most customers are looking to purchase a syrup for the Master Cleanse or Lemonade Diet. If you are reading Stanley Burrough's book on the Master Cleanse, remember that the book was Copywritten in 1976 and again in 1993. That was the latest version that I could find at the Borders Book Store. Page 17 describes the type of syrup that Mr. Burroughs prefers his following to use. I want to update you on the 5 grades of syrup in Vermont, which are from lightest to darkest: Fancy, Medium Amber, Dark Amber, Grade B and Grade C. He is correct that the grading system is by color although we at the sugarhouse do use flavor as well.

This is not a table syrup. It is very strong and leaves an after taste when consumed by itself or on pancakes.

Our syrup is not certified organic. However, we do not use chemicals or pesticides in the
sugarwoods.

We do not use formaldehyde in the collection of maple sap. This is the one question I am asked the most through email. Since Mr. Burrough's book has been published, the International Maple Sugarmakers Association has taken formaldehyde use very seriously and worked together to abolish its practice. I can't believe that anyone is using it still, I know we are not. We do put our syrup on our table for the family!
